Seasoned Spinach Sushi

Ingredients
For the rice
2 C sushi rice
4 T rice wine vinegar
1 T sugar
For the filling
400g spinach
1T sesame oil
0.25 C sesame seeds
0.5 t salt
1 medium-sized red capsicum
1 avocado
1 spring onion
Half a cucumber
Fresh coriander
Nori (seaweed) sheets (6)
