Cabbage and Carrot Coleslaw with Fennel

Ingredients

1 large carrot, grated (approximately 1.5C, although the exact amount doesn’t matter)
1.5 C (approximately) sliced red cabbage
2 spring onions, sliced into small rounds
0.25 C fennel, chopped into small pieces
3-4 T mayonnaise
0.25 t salt (or to taste)
0.5 t pepper (or to taste)

Directions

Mix all ingredients in a bowl except the salt and pepper. Taste, and add salt and pepper as required.

I really like the fact that I am encouraged to cook with what arrives in the veg bag, often new, exciting veg. It makes me more adventurous and my meals are healthier based on seasonal ingredients and veg grown naturally, no chemicals.
