Chicken & Grape Poppyseed Salad

Ingredients

For the dressing:
·1/3 cup white vinegar
·1/4 cup maple syrup
·1 tablespoon Dijon mustard
·1 tablespoon poppyseeds
·1/3 cup vegetable oil

For the salad:
·6 cups bite-sized leafy greens
·1-2 cups cooked shredded skinless chicken
·1.5 cups seedless grapes, halved
·¼ cup raisins
·¼ cup pumpkin seeds

Directions

Whisk together dressing ingredients until well combined, then set aside. Assemble the salad by adding the mixed greens, shredded chicken, grapes, raisins, and pumpkin seeds to a large salad bowl. Drizzle in the poppyseed dressing and toss until everything is coated well, then serve.

I really like the fact that I am encouraged to cook with what arrives in the veg bag, often new, exciting veg. It makes me more adventurous and my meals are healthier based on seasonal ingredients and veg grown naturally, no chemicals.
