Kale, Cranberry and Garlic Salad

Ingredients

5-6 big kale leaves
6 cloves garlic
1 T oil
0.25 t salt
0.25 C cranberries

Directions

Chop the garlic roughly, and rip the kale into bite-size pieces. Heat the oil in a medium-sized pan over a medium heat. Once hot, add the garlic and salt and fry for 20-30 seconds, until fragrant and no more. Add the kale and fry for another 30 seconds - 1 minute, until the kale is bright green and slightly wilted. Take off the heat and leave for 1 minute. Tip into a bowl and mix in the cranberries.

I really like the fact that I am encouraged to cook with what arrives in the veg bag, often new, exciting veg. It makes me more adventurous and my meals are healthier based on seasonal ingredients and veg grown naturally, no chemicals.
